low cal bread recipe?

hi all ive finally persuaded himself to let me have a breadmaker ! any recipes for lowcal, lowfat healthy loaves i could make?

    You can for sure leave the fat out altogether. My BM book has a recipe for a french loaf that has no fat in at all.

    Many people use ½ or less of the recommended amount of sugar, so you could certainly try that one too.

    As for calorific values of different flours - I have no idea :)

    You can also increase the water content of your bread. Most recipes have about 50-60% water to flour, but breads like ciabatta go up to as much as 75%.


    I would suggest, though, that you make a few standard recipe loaves first to get the hang of it before experimenting. Then just change one thing at a time to see how it goes. That way, if you get a brick you'll know what caused it :)

  • I would rather cut thinner slices or spread butter more thinly than alter the basic bread recipe as IMO it is important to have all the ingredients in the correct ratios to get a good tasting loaf.

    I agree with Milkmaid! If you leave all the fat out of the recipe the bread gets stale very quickly. Olive oil or sunflower oil gives a very light textured loaf with a crisp crust and will keep a bit longer. I use a heaped tablespoon of olive oil spread in a 1kg loaf and it keeps for a couple of days (and freezes well).
