Putting 1 through per month is the best way to do it, as you avoid estimated bills and it shows how much of your monthly DD you used. Leaving you with an accurate balance at the end of each month. The reason they offer you up to 12, is just encase you want to find out what you used in a specific day, or week for example. Meaning you would have to put in extra meter readings.

You can actually enter up to six sets of meter readings per billing quarter.
However, as Ferr96 says, this is only an option should you need to see how your account is standing at any given time.
Entering readings once a month is fine if that suits you.
