an anchovy free pork pie recipe please?????ive googled it and theyve got anchovies in em...... yak!!! just a plain melton mowbray ish pork pie recipe pleeeeeeeeeeaaaaaaaaaaaaaaaaassssssssssssseeeeeeeeeeeeee?:D

I assume you have the pastry recipe you are happy with? For the filling (out of my trusty farmhouse cook book)
1lb Shoulder pork which should give roughly 3/4lb lean and 1/4lb fat
2 level tsp salt and pepper mix
1/4 level tsp powdered mace if available
For the jelly:
1 pig's trotter
1 bay leaf
6 peppercorns
Prepare jelly a day in advance by boiling trotter with bayleaf and peppercorns in 1 pint of water until quite soft and leaving the bone (about 3 hours). Strain into a bowl. Need 1/4 pint for 1 pie. Leave overnight. Remove fat from top. If jelly has not set simmer gently to reduce amount. Discard trotter.
Make your pastry (let me know if you need recipe)
Filling. Trim any gristle off. Cut into very small pieces and mix in the seasoning or using coarse cutters, put pork and seasonings through mincer.
Roll out 3/4 pastry to fit a loose bottomed tin 6 inches across x 3 inches deep. Pack filling in loosely. Roll out lid to fit, brushing edges with beaten egg and seal firmly. Cut away surplus pastry. Flute edges of pie and brush all over top with beaten egg. Make hole in centre.
Bake for 30 mins 200C - Gas 6 - 400 F. Reduce heat if browning too quickly to 190C - Gas 5 - 375F and bake for a further 1 hour. Remove from tin to wire rack. Boil up jelly. Allow pie and jelly to cool for 15 mins then pour jelly through hole. Leave to rest 24 hours before eating.0 -

Right Carrie, pastry as follows:
Hot water crust pastry:
4 fluid oz water
4 oz lard
10 oz strong plain flour
1/2 level tsp salt
1 small beaten egg
Boil water and lard together. Pour onto flour and salt. Mix with a knife (it will be hot, careful). Knead with hands until smooth. Allow to cool a little before rolling out.
Think I might give this a go myself. My recipe book says "Freezes satisfactorily, but not longer than one month"0 -
