I found and posted the offer yesterday by following an old thread, but haven't seen it advertised anywhere this year yet.

WOuld I be ok If I used this to book a return trip but only taking my niece one way????? but obviously paying both ways ??

You would have to pay for each leg of the journey separately, and could only use the card & discount on the part your niece was with you.

Only one adult in the party needs to have one, see T&C in post #1 - point number 5.
You can name two different adults as cardholders though, so it can be used by either.
