With what can I replace wine in a recipe?

As a Muslim, I don't use any alcohol, and have never found out what do use as substitute for wine in a recipe. I usually just don't bother with any recipes that call for it, but there are some that I would love to try if there is any sub.
Eg, I wanted to do this recipe today with ray wings

Any ideas anyone please?

You could replace the wine with a fish or chicken stock or even water."Let your boat of life be light, pack only what you need- A homely home and simple pleasures, one or two friends worth the name, someone to love and someone who loves you, a cat, a dog, a pipe or two enough to eat, enough to wear and a little more than enough to drink, as thirst is a dangerous thing" Jerome k. I suppose it would depend on the dish maybe. Definitely couldn't do fish stock. I'm just at the stage where I can cope with fish that doesn't taste very fishy!
I was sure that somewhere in the dim and distant past, I had heard that you could replace wine using apple juice. I have never tried this, as I don't want to 'kill' the dish and waste food. Anyone tried it?Father Ted: Now concentrate this time, Dougal. These

For most recipes you can replace the wine with stock, either meat or vegetable depending on the recipe. And in some wine-vinegar or balsamic might be appropriate. I'm not sure whether it matters to you but as soon as any alcoholic drink is heated, even slightly, the alcohol completely evaporates and all that's left is the flavour, so you wouldn't strictly be breaking any rules by using it in cooking. This may be an elegant distinction which may not be of use to you, however.0

Rosie I would use white grape juice and half veg stock (or even just sparkling water) and a tablespoon of vinegar to cut the sweetness. It's what is inside your head that matters in life - not what's outside your window

I never though of non-alcoholic wine TBH. I would be ok with that, but dh wouldn't. I know it doesn't have alcohol, and he knows it doesn't too, but he couldn't have it here anyway. Logic notwithstanding, he just couldn't.
I never thought of white grape juice. I may buy a carton and freeze in portions to have when I need it. Otherwise it would all get drunk in a day by my greedy lot! What's so bad about getting drunk you say? Ask a glass of water!!!:rotfl::rotfl::rotfl::rotfl::rotfl:

I have a feeling that white grape juice might be too sweet for some recipes. Anyway, experimenting is half the fun of cooking in my book.0

How about verjuice?0

I've switched red wine for red grape juice, and that works very well. I'd probably do the same with white and switch that for grape juice too. Wouldn't try apple though.Softstuff- Officially better than 0070

I think I'd go with apple juice as a replacement for white wine and red grape for red wine. I'd add a tablespoonful of vinegar or lemon juice to cut through the sweetness a bit. Chicken stock is usually alright to add to any savoury dish for liquid, although watch out for saltiness.0
