Thanks so much for all the tips above.
I have decided that I want to do the 'cooked in coke' recipe, but I want to do it in my slow cooker.
I reckon that I will start soaking it on the evening of Sunday, and change the water 3x and then test the saltiness by sampling the water ????
Monday morning, I will put it in the slow cooker and leave it to cook all day long, as well as cooling down in the slow cooker. Is there any way that I can check it is not over cooked in the slow cooker ?, apart from it falling apart, because by that stage it will be quite obvious to me ??
Tuesday morning, I do the roasting bit of it. Only problem is I can't find cloves ....... tried all the local supermarkets, and my only options are to ask neighbours if they have any (hoping they won't be using them themselves, if they do have). Any suggestions to alternatives for cloves if I still haven't managed to source any by Monday evening ????0
