    Inspired by last nights Masterchef I am going to whisk the mix until it is really thick and put in in a cooked pastry case and call it a flan!
    I think this idea will work - am going to present it to the family at lunchtime!:D

    Great idea! If it doesn't work, you could always spoon some over a plain sponge or into pastry cases before serving like a sauce.

    is in the freezer at the moment but is daughter's birthday party on saturday so if I scrap some out of the pastry case I may be able to offload some with the birthday cake?! :rotfl:

    That's a good idea. What about making some little biscuits but not sweet and use some to sandwich them together.

    Thanks Rosie - good idea ... just had a look at it and the mix has really firmed up overnight ...
    I'm going to offer it as pudding at lunch again today then with the remainder I think I may just spread the mix on the birthday cake as I serve it ... I really want rid of it now as it's taking up too much space in my freezer!

  • I've had this problem with cream cheese icing before, got fed -up and binned it. Y ou need to use 'full fat' cream cheese , it comes in a 'silver' box at the supermarket, don't think I can give the brand name here (?) but is named after somwhere in usa, it's the fat content that make it all bind together and fluffy (and yummy)
