Use for sloppy carrot cake icing?

Morning!
I have got about 2 litres of a sloppy mix which was supposed to be topping for a carrot cake ... It is a mix of icing sugar, cream cheese and orange juice.
I think I overmixed it and adding more icing sugar didn't seem to thicken it and now I only have a bit of icing sugar left and need that for w/e baking.
Sooo what can I do with the sloppy mix? can I make some sort of flan with it? would it set or do I need to add anything to mAKE IT SET? It tastes good, is just too liquidy.

    Hello, as it's got cream cheese in it, perhaps you could try putting it in the fridge to firm up?

  • Can you add some of it to some more cream cheese until the cream cheese is sweet/orangey enough? And have you baked the cake yet? If not, you could add the rest of the icing to the cake mix as a replacement for some of the liquid and sugar in the recipe.
  • thanks guys - yes cake already baked. It's for a workshop I am doing tonight :o so will be a bit embaressing as second attempt is dodgy too, I think the cream cheese here (France) may not be the right thing to have used :o.
    Have put the slops in the fridge but doesn't seem to be firming up ... do you think I could bake a cake with it then? my daughters birthday on saturday so if I could create something from the mix that would be handy! Would it be disgusting to add flour to it?

    Don't add flour! If you have a coffee grinder or a grinder attachment for a liquidiser, you can make more icing sugar by simply blending up normal white sugar - either castor sugar or granulated will do. It isn't quite as smooth as normal icing sugar but sieving it will get rid of the biggest bits. Do a little at a time - just enough to cover the blades. It makes clouds of sugar when you open the lid, and takes a while to make any quantity, but works if you can't get more icing sugar in time.

    Inspired by last nights Masterchef I am going to whisk the mix until it is really thick and put in in a cooked pastry case and call it a flan!
    I think this idea will work - am going to present it to the family at lunchtime!:D

    STILL too sloppy for my fantastic plan even after 10 mins whipping :o Have put mix into my flan case and put the whole lot in the freezer to serve in one hours time! We WILL eat it - I will not be defeated and throw it away! :rotfl:

    I am no cook but was going to suggest that you add some gelatine to the mix to make it set (following the instructions on the gelatine packet first - don't do what I did once and just sling the gelatine in and then wondered why I got blobs of gelatine with strawberry creamy slops).

  • Thanks Horace x too late for gelatine now (I haven't got any anyway!) - even after an hour in the freezer it was still sloppy BUT my husband and small daughter ate it .... it looked great but was VERY sickly and runny - I think it will be hanging around in the freezer for quite a while!!
    Husband said adding all that icing sugar made it runnier?? but I can't see how that is right!?
