OK I have another lovely recipe courtesy of a lovely friend (she knows who she is ) and I am going to post it on here as well in case it helps anyone else.

Puy Lentil/Lentilles Vertes Salad

"Put into a saucepan:

• 250g lentils (NOT red lentils - I checked, they don't work!)
• One chopped onion
• One chopped carrot
• Three bay leaves

Cover with plenty of water and simmer for 30 - 45 minutes until soft - but still in shape.

While it's cooking, combine in a bowl:

• A good dollop of olive oil
• A tablespoon of whole grain mustard
• A good dash of balsamic vinegar
• Crushed clove of garlic
• Half a chopped red onion

Drain the lentils when done and toss with the dressing while still hot.

Allow to cool and then marinate overnight in the fridge.

This is lovely with a side salad and crusty bread."
