Feeding a family of 4 for £2 Challenge

  • Maybe not quite £2 buying whole packets of things but not far off it in portions used, I made sausage pie last night & it fed 6 of us!

    12 pack sausages
    Handful of pearl barley
    2 large onions
    Beef stock
    Puff pastry

    Brown sausages, put into casserole dish with sliced onions and barley, cover with beef stock. Cook very slowly (I did it on gas mark 3 for about 3/4 hours). Thicken with gravy granules or cornflour then top with a sheet of puff pastry. Turn the heat up and cook for another 15 mins or so. Serve with mash and veg of your choice. Yummy, comforting and filling for very little pennies

    pasta bake. i like the normal owned price pasta but if you used the 20p stuff i reckon this would be about £2
    whilse 500g bag of pasta is cooking mix 1/2 jar cheap red pesto, tin value tomoatoes and a tub of value philly style cheese in a large mixing bowl. add drained pasta and mix well with a handful of microwaved frozen peas or sweetcorn before placing in an oven proof dish to cook for 30 min at gas 5.
    feeds my growing brood. :)

  • Being perfectly honest, it may just have been the nicest curry I've ever made! I had every intention of keeping half for lunch tomorrow but ended up eating the whole potful *blush*

    I had tomatoes in the fridge so bunged in a few cut into chunks, and a clove of garlic too

    I made this chickpea curry and it was absolutely delicious. Highly recommended.

    Chicken and sweetcorn pancakes

    4 Chicken thighs - meat removed
    some chopped ham if you have some
    ½ an onion - preferably red
    a handful of frozen sweetcorn
    a few chopped mushrooms if you have them (frozen will do)
    white sauce
    8 Hm pancakes
    1. gently fry the onion until transparent , add the mushrooms, and thigh meat then the sweetcorn fry gently for a minute or so
    2. make up a basic white sauce (1oz cornflour, 1oz butter and milk)
    3. Fill pancakes with mixture, roll them
    4. up and place in an ovenproof dish
    5. cover with sauce and sprinkle with some grated cheese and bake in the oven 180c for 25 minutes or until golden brown

    I am an advocate of rubber chicken so roast one day, stir fry, stew, curry the next day and use the carcasse to make a delicious stock, to use in soups, stews, risottos etc

    offal such as lambs liver, kidneys and hearts can make some really tasty meals

    Risotto is another cheap meal and you can add anything that you want to it, my family's fave is mushroom

    Tuna Fish cakes, Tuna and sweetcorn pasta

    Sausage Toad ( if you slice the sausages they go a lot further), Sausage pasta, sausage hot pot

    Savoury bread and butter pudding using stale bread add whatever veggies/meat that you want.

    We have a soup and pudding night at least once a week (HM soup, crusty bread and usually an apple sponge and custard.

    ok, all from scratch from £2

    pack of 6 market value tesco sausage (50p)
    500g value pasta (9p)
    1 onion (approx 20p)
    1 tin tesco sived passeta (29p)
    As much of the cheapest cheese as you can buy by weight from the deli for 92p (would expect at least 100g as my tesco deli has cheese for £6p/kg which should be about 140g per £1)

    chop sausage and fry, drain most fat and fry onion, add toms and stir through cooked pasta, top with crumbeld cheese and bake until bubbling and as desired.
