Soup of the day

Hi, I am a great fan of soups. The thicker, spicier and cheaper the better! Always made from what ever there is to hand.
Today, there was
-half a serving of ratatouille from last night,
-two sachets of 'bean sauce' kicking around from a Nachos kit (DD had eaten the nachos!!),
-a tbsp or so of home made salsa in fridge from weekend, (nothing is ever thrown out)
chucked it all in pan with
-tin of cheapo kidney beans
-very thinly sliced celery (cutting all stalks at same time working from top end)
-tail end of romaine lettuce (sliced in similar fashion to celery) needed using up and mostly the 'stalk part' was left.
added some water and simmered until celery was 'al dente' (good to have some texture).
Didn't blitz this one, but often do.
It was really filling and tasty (even the lettuce!!). Would feed 3/4 depending on appetite.
Love these veggie soups, was converted from beginning of the year when I began SW diet. It really worked for me. Not sure of the contents of the bean sauce in this soup, but am able to relax a bit with food now.
Sorry this is so long, but I wanted to illustrate to new OS members that 'recipes' are not needed for a lot of things. Using curry, chilli, pepper etc will spice up/hide all sorts of ordinary stuff.

I love home made soup.
Fry some onion first in a saucepan, not frying pan, until soft.
Chop into pieces, abit bigger than dice:-
Potatoes, (Left overs are fine)
Swede, parsnips, carrots, squash, courgettes or anything of those sorts.
Tip into saucepan and cook in vegetable or chicken stock.
Add ground black pepper and mixed herbs.
Boil gently until tender.
Tip some veg and enough stock to cover into blender and blitz, save this and do the same again, until the stock is nealy all used.
Then mix in blended soup.0 -
