Linda McCartney tastiest recipe

Which recipe have you tried and rate as good? I want to increase my veggie repertoire and would welcome suggestions.

  • We love her baked macaroni and cheese. Not like one I'd ever made before but brilliant.

    Sadly I haven't tried and other recipes as I tend to use them for inspiration rather than following them.

    On the advert the puy lentil and mushroom pie sounded nice, but I'll be honest veggie doesn't usually inspire me as I don't really like many pulses! I have just realised that some may not know what I am talking about.     Her mushroom risotto, with some modifications, has become my 'signature' dish (delusions of grandeur or what?!).

    It's great and everyone likes it, even meat eaters (except best friend who hates mushrooms!). It's also quite easy although you have to stir it a lot.

    I have really enjoyed her potato rosti and sweetcorn chowder recipes in the past (I think they're both in the "Linda's Kitchen" book). Also have a couple of VERY tried and tested favourites from an old WeightWatchers book - Chickpea Curry and BBQ Quorn Mince. I also regularly make various soups from an old New Coven Garden Soup Co. recipe book - the most expensive thing I've made from that one was Cream of Fennel, which worked out at £2.76 for six portions. I then beef-up the portions with pasta, bread or cous-cous if I am particularly hungry. Happy to share the recipes if you like - let me know.

    Fry mushrooms with parsley and add garlic near end, turn off when juices start to run and cover until needed at end.

    Soften onion, add rice, mix well with oil and add stock bit by bit until rice is cooked, then add tarragon (fresh in recipe but dried seems to work well too) and some grated cheese, then mushrooms and mix together. Serve with salad and garlic bread/ciabetta if desired.

    Do let me know if you want precise recipe with quantities as have done this a) off the top of my head and b) whilst squiffy! :p
