Stolen Horsebox - help please

Hi all,
I'd appreciate your help.
My son's partner has had her horsebox stolen. It was kept outdoors in a stable-type yard where she pays a rent to keep her horse. It had a wheel-clamp type device fitted to the wheel but it was cut through with an angle-grinder. She's now worried about how much she is going to get back for it through the Insurance Company.
She bought it about a year ago, and paid less for it than it was actually worth because she bought it from a friend and the only receipt she has is one from the friend for £1600 (It will actually cost her around £2000 to replace it). When she took out the Insurance she told them it was worth £2000 and has paid premiums based on that amount. The trouble is, I assume, that the Insurance Company will only pay out on the receipt.
Can you offer any advice on how we handle this please?

The insurance co will pay out on market value, so she will need to provide examples of horse boxes at £2000 to the insurer.
I personally wouldn't tell them she paid £1600..0 -
