Loft Insulation advice please

My new home has quite a small loft. (you can see the eves? in the corners of the rooms below) The floor of the loft, therefore the ceilings below are lathe and plaster.
It currently has old pillows as insulation put up there by the previous owner.
I haven't got the mobility to get up there and do the job myself, so a friend of mine (hopefully) will do it for me.
Should we remove all the old pillows and duvets etc?
Should we take any extra precautions due to the lathe and plaster.
How much short of the eves do we leave it to ensure adequate ventilation?
Anything else we need to be aware of?
