have mae these this morning and they turned out fab! Last batch I made with my usual pastry were a bit of a let down pastry wise...but these are fab (yes had to quality test one alreadyLOL)
Pastry is exactly as described : crisp yet crumbly....yummy:T
do agree it was a PITA to work with though, especially with a 3yroldand 18 month old"helping" me...but worth it !

:xmastree:Made these pies today omg they are lovely the pastry on the top was so crumbly yet crispy the pasrty on the bottom was so soft. I made some last week with ready to roll pastry as I am no good at pastry (great with cakes) these were far better than the shop bought pastry which tended to be rubbery. I made a batch on Wednesday to try out the recipe as I needed some to take to work, but also made a couple of deep filled ones in a muffin tin for OH (he has been asking for some "like you get from supermarkets") Put one in his lunch box Thursday morning and came home to find him on his knees and proposing marriage! :rotfl:

I am really enjoying making my way through this thread, I only came online to get a mince pie recipe, which is on page 1 and now I am sat with a cuppa reading the whole thing :rotfl: The recipe looks great and I can't wait. I have a huge family I live away from, I am flying to see them just before Xmas so I am going to have a suitcase full of pies!
Honestly researcher, never a truer word said in your above post. All too often we get caught up in silly little things and take things for granted. Unfortunately I have started a bit early this year and have had a few nights of over indulging, crying and rowing:rolleyes: but I see it as I have got it all out of the way now and can have a great Christmas with my loved ones counting my blessings. Me and the oh made these earlier. Split to make 12 but maybe needed to roll the pastry a bit thinner and only got 10. They are really nice and the pastry is just amazing and crumbly. Even though my crazy oven over cooked the bottoms a little they still tasted great
These are the nicest mince pies I've ever made and I'll make loads more for xmas and bung them in the freezer.

okay now my partner and i have decided we are having a money saving Christmas, i have decided that the star attraction of all my presents is going to be these mince pies
Does anyone know of anywhere that sells cheap boxes/tins and ribbons etc to really make it a star attraction? I have a huge family as does my other half and I think a box of these pies and a bottle of wine for each household will go down a treat

Great thank you. Quite proud of myself that we have gone money saving for Christmas.
