If nobody comes up with a tried and trusty recipe there are few to choose from here:-

is that a hock?
we have one in the fridge defrosting for soup tomorrow.
boil it up for about 1.5 hours until the meat is falling away. tear/cut all the meat off the bone and then add to some fresh stock. add rice/pearl barley/pulses, leek, carrot and any other veg that you fancy really. season well and simmer until veg is tender.
that's what we're having tomorrow!0 -
A hand of pork is a roasting joint (it would be called a shoulder, I think, if it were a lamb, but any butchers out there do correct me if needed), whereas a 'hock' is usually cured, ie bacon or ham, hence the lovely soup recipe above. Make a lovely roast with crackling, apple sauce, veg and gravy!0
