Help in finding correct recipe for Edamame

Ok last year my brother took me to a japanese restaurant and we had Edamame (soyabean in the pods) and I want to make them at home.

I've looked online but most say just season with sea salt but I remember it was coated in a sort of spicy red/brown spice.

If anyone knows could they tell me.

    the only ones I've ever eaten (in UK and in south east asia) have just been steamed/boiled and sprinkled with coarse sea salt... not come across any spicy red/brown spice.. sorry can't be of any help! just wanted to comment cos I think they are lovely as they are :-) just with salt that is :-)

    p.s. which restaurant did you have it? maybe you can ring or email them to ask?

    I have had them with crushed chillis and sea salt at wagamamas-just crush dried chilli flakes with equal volume of sea salt in a mortar and pestle and sprinkle over steamed edamame

    Thanks siaoeh, my brain wasn't working, checked the restaurant website, www.magamama.com and it turns out to be chilli and garlic salt. I was browsing youtube and found some people use cajun spice and chinese five spice so it appears to be personal preference.

    Hiya,

    I recently had these in the Giraffe restaurant and they were yum!

    The ones we had were boiled and then stir fried with Chilli, Salt Soy Sauce and Mirin....delicious!

    I really want to try and and make these myself- but am not too sure that I'll be able to get hold of fresh beans...I was wondering if there were any other beans that could be used as a substitute?

    Something with a similar texture but easier to get hold of, I was actually wondering if you could do something similar with braod beans or something? Hmm something to ponder!

    No you didn't MrsWoolfe, I'm going to first use frozen soyabeans (without the pods) bought from Tescos (£1.49 for 500g but other stores may have them) and I'm trying to source some soyabeans to grow myself. So far found 2 varieties that can grow in the uk Envy and Elena but can't find a supplier.

    ooh please let me know if you find beans you can grow in the UK? I love them and they are a bean that my DH will happily much away on...will have to pop into tesco and see if I can find some- were they just in the normal frozen veg section?

    I ask as our big one has a frozen world/asian foods bit (which is always dangerous for me chicken samosas and indian veg YUM!) I'm so used to only being able to get things like that if I go into very asian areas like wembley/luton I can go a bit mad there lol! I couldn't see edamame there?

    Hmm think a trip to the chinese supermarket for some mirin may be in order on saturday!:D

    I get them frozen in the chinese supermarket, but I think I have seen them in Tesco (they definately have them unpodded - but without the pod they are not as much fun - "squeezy peas" in our house!). I just boil them briefly and then add a few drops of seseme oil, some sea salt and a chopped chilli - YUM!

    Hmm well I was thinking of heading over to the SeeWoo in any case to get a few more bits (I've been eating a lot of noodle broths recently for lunches) and do need to pop into tesco too.....well I guess one way or another we will be eating Endamame beans this weekend!

    I live in a rural area so no asia delis/stores but yep the soyabeans are in the frozen select with the rest of peas and beans in my local Tescos.
  • I would boil the edemame beans until cooked through, then quickly stir-fry with chilli, soy sauce, a little honey and a good glug of soy sauce to make them rich and sticky. That is how I have eaten them in restaurants before!
