As the title suggests, I have some very ripe bananas and 3/4 of a pot of single cream that need using. Could anyone suggest a dessert I could make?

Heh, I like what I call 'banana smoosh' - does what it says on the tin! Smoosh up bananas, add enough cream to make it yummy and sugar or sweetner to taste. A drop of vanilla adds another dimension if you can be bothered/have any in. Looks gross, tastes great!Trust me - I'm NOT a doctor!0

Banana Cake with Butterscotch Drizzle
For cake:
175g plain flour
2 teaspoons baking powder
1/2 teaspoon bicarbonate of soda
125g unsalted butter , melted plus extra for greasing
150g golden caster sugar
2 large eggs
4 small very ripe bananas, peeled and mashed
1 teaspoon vanilla essence
For drizzle:
75g golden caster sugar
50g light muscovado sugar
1 tablespoon golden syrup
75ml double cream
1) Preheat oven to 180C, fan 160C, gas 4
2) Grease an 8cm deep, 25cm x 10cm loaf tin and dust with flour. In a bowl, mix together the flour, baking powder, and bicarbonate of soda.
3) In a seperate bowl mix the butter and sugar together with a whisk. Beat the eggs one at a time then add the bananas and vanilla essence. Gradually add the flour mixture, stirring well.
4) Pour into greased tin and bake on centre shelf for 50 - 60 minutes, or until a skewer into the cake comes out clean. Leave in tin to cool.
5) Meanwhile, place all the butterscotch drizzle ingredients in a saucepan and simmer over low heat for 5 - 7 minutes, until smooth and dark golden. Leave to thicken and cool slightly.
6) Turn cake out of tin and put onto a plate the right way up. Pour sauce over the cake.
This is a gorgeous recipe for using up old bananas and is especially nice once the sauce has set! Enjoy!I'm so sorry if you were enjoying this thread and mine is the last post!!

I love bananas done on the barbeque - or in the oven.
Wrap in foil (in skins) and put in a medium oven.
Serve when bananas warm and soft.
I love it with ice cream - but I'm sure cream would be a perfect partner...:jFlylady and proud of it:j0
