Paying balance off in full each month

I've just switched my credit card to automatically pay off my balance in full each month. However, I have a question - what would be the likely cut off date for the balance which is to be paid off?

I'm not sure I'm phrasing that very well, but by way of example - if my account is debited on the 1st of each month, what would be the date of the last transaction which was included? Could I buy a widget on the 31st and it not be included, or the 25th, 15th?

I seem to remember some blub about fifty something days interest free in the past.
