Freezing tarts

I'm havign people round for NYE and am trying to get most of the work done and frozen so that I have minimal work to do at the time.

I want to make a tart like this one

I was wondering if it would freeze ok. The filling is like a sweet lemony type of filling that you would get in a quiche, and seeing as though quiche freezes, I thought this would be ok.

What do other people think?

Or does anybody have ideas for a relatively light dessert that would freeze ok?

  • Hi! It looks like something that will freeze well. If it were me, I'd make one today, freeze it, and eat it next week. That'll give you a good indication of what it'll be like on NYE.

    At the moment its such a squash that we are having to bring the garden table in to make enough room.

    Do you have any ideas on how to hide a green plastic table without spending loads of money on a table cloth?

    Also, what can I do with 9 egg whites except meringues? I don't have enough room in the freezer for meringues or pavlova cases!

    Cover the table with a cheap disposable paper tablecloth. Loads around in the shops at the moment for some unknown reason.

    The tart has been made and looks delicious.

    I got halfway through making the filling and realised duh- I'm making lemon curd. It also wouldn't fill the pastry case, so while the tart was cooking, I sterilised an empty jam jar in the oven and poured the rest of the filling into it.

    I now have ready
    A lemon tart (in the freezer)
    A jar of lemon curd
    9 egg whites (in the freezer,waiting to be whipped into a pavlova so I can offer the guests a choice of desert)
