HSBC regular saver has matured. What now?!

I just received a letter telling me my regular saver will mature and it looks like as I have no other active saving accounts at HSBC my regular payment and the amount that's in it will be converted to HSBC's flexible saver.
The interest rate looks a little disappointing to me. What should I do with the money? I'm not exactly rolling in it right now and fighting the temptation to spend it.
I can't put it in an ISA as my ISA is fully paid up for the year.

You could open an easy access savings account and use it to feed the HSBC current account which could then fund the HSBC regular saver 2 account.
Issue 2, runs for 12 months and pays 8% interest on the first £250 deposited each calendar month. Payments up to £1,000 may be deposited into the account each month, but monthly amounts between £250.01 and £1,000 will receive interest at a lower rate (4.25%).
