Hi Needstochange - how're you getting on with this? Have you been able to follow your mealplan and has it been successful with the family? I had an idea if you had a leftover sausage or two for making another meal...
Finely chop a leftover sausage or two and add a fair bit of finely chopped mixed veg. Cover with a bit of gravy or tomato sauce and use as a pasty filling. That should get you at least another meal out of it as a lunch.
