Bread making - Where did I go wrong?

Hi,

I am wondering if someone can help ... I have been searching the forums on breadmaking but I am getting nowhere.

I made my first batch of breadcakes (breadrolls in you don't live in Yorkshire) today - I made my dough in the machine and then baked them in the oven however they were hard on the outside but lovely on the inside.

I want to make some bread this way and realise that I will only get a cripsy top rather than all over. Does anyone have any advice on how to get the nice soft rolls as I really would like to make more.

    I think you have to brush the outsides with butter after they come out of the oven and then leave to cool (this is meant to make the crusts softer)..it doesn't make them oily all over apparently, just soft.
    Why does my dog chase cars? Even if he caught one he hasn't passed his test!

    there's a recipe thriftlady posted for soft rolls that everyone loves, I'll go & have a look for it & post a link (unless someone else beats me to it)

    if it's any consolation, my first attempt at breadmaking was rolls to go with HM soup, the soup was fine but the rolls turned out like tiny grey cannonballs :o
    I've gotten better at it since then thank goodness!

    I add a teaspoon of olive oil with the flour. I also dust the tops of the rolls with flour before baking.

    yes that's a good idea :) also cooling them under a teatowel or cloth helps

  • Thank you very much - I will give that recipe a try tomorrow ...

    My first roll that I had straight from the oven was fine :o - I might try the brushing with butter too see if that helps.

    Will be making my next batch tomorrow in hope of cracking it before my work week starts - would be lovely to take some homemande bread and soup or sandwiches with home made bread.
