This is an interesting and relevant thread for me too!I made two Christmas cakes last weekend (one for my family, one for OHs family) and only had one tin. I put one in the tin and the other I left in the metal baking tin but wrapped a tea towel around it (no foil stupidly) as there was an open top and put them both in the cupboard with the intention of borrowing another cake tin pdq. I too have only just remembered they are there and am worried that the one with the tin and teatowel will be off / hard / inedible. Any views?Pink Pixie:footie: Mummy to 2 boys - born 2009 and 2011 :footie:0

Penelope_Penguin wrote:Hi, Meerustar! I'd agree with above posters, with one proviso. I once wrapped a christmas pudding in foil, and when I opened it, the pudding had eaten into the foil and it had holes in it. Wasn't going to take the risk of aluminium poisoning (implicated in Alzheimers) so had to chuck it. I now wrap first in greaseproof, then in foil.
HTH, Penny. x
I have wrapped in greaseproof paper first and then wrapped tightly in foil, so will feed again today and write on the calendar so I remember for the next couple fo weeks before I ice it.
From the replies above I think I have saved the cake just in time, lol.
BTW, anyone elses cake feel like the weight of a housebrick :rotfl:0 -

I don't get it - this is what you're supposed to do with Christmas cake. It doesn't have to be fed, just left to mature. It sounds as though it was wrapped fine, so there's no problem at all.0

I made my Christmas cake in early October, and as I don't like alcohol in it, I stuck it in the freezer. I usually make a very small tester one with a bit of the mixture, which we ate the day it was made!!!!!!
I love the tomato soup cake, the one thing I do is add Alexia raisins ( the big fat ones) which I soak for a few minuits in hot water. You've just reminded me - I'm going to make another tomorrow.
Has anyone got a recipe to make your own mincemeat. I have made it in the past, and it is so much nicer than the bought stuff. A lot more moist as well.0
