hi any plasterers on here, i need a bit of advice. recently bought a house and having stripped the wallpaper found the plaster was hollow and just fell away from the wall/lathes.
what would be the best way to redo the wall, take off the laths, plasterboard it and skim or apply new plaster to the laths and then skim??

If it's not just a small area (which you could probably bodge .. er, I mean repair) then personally I'd remove lathes, plasterboard and skim.0

Yes - strip back the laths and plasterboard direct onto the studs and skim over. But you also mentioned its blown on the walls (which I'm guessing are either block or brickwork) as well. In that case you have two choices. D&D plasterboard onto brick/block then skim OR get the relevant walls replastered from scratch.
I'd suggest you need a friendly neighbourd spread to come in and evaluate what needs doing for you and give recommendations.
If you only recently bought the property what on earth was your surveyor doing if he didn't find the blown plaster if its as extensive as you suggest?
