How about apple cake, and it is so easy the kids can do it themselves (I used to work in a playgroup, and we made it with the little ones there, or at least the mixing bit, under supervision!)

You need 2 eggs (weigh them, in their shells)
and the weight of the two eggs in sugar and SR flour, plus apples

Crack the eggs into a bowl, add the sugar and whisk together till frothy (use an electric or hand whisk, a fork, anything).

Add the flour and fold in gently with a metal spoon. Put the mixture into a greased and floured (or lined) shallow baking tin (a sponge tin size or a bit bigger). Peel and core the apples (how many depends on how big they are and the size of your baking tin), cut them up into thin slices and arrange all over the top of the cake mixture in the tin. Bake at 200 degrees for about 20-30 minutes till golden brown and risen. Nice as a cake , or as a pud with custard, cream or ice cream.

If you have one of the flan tins with a raised centre (I don't know what the proper name for them is) you can also use this mixture, without the apple obviously, for a sponge flan case that you can then fill with fruit.

This recipe didn't really come from anywhere, traditional, I think. I didn't get it from a book.
