Leftover pancakes - will they keep?

Hello all-knowing OS-ers,

I've got two leftover pancakes... any ideas what I can do with them?

Will they freeze? Or should i just keep them in the fridge and reheat tomorrow?

    I've never tried them myself but I would guess you could put them in the fridge and reheat tomorrow. I wouldn't freeze them personally as I don't know how they'd defrost. Or you could chill them and just have them cold tomorrow - perhaps with a warm filling (hot fudge sauce? warm jam? warm banana?)

    Yes, they keep! and freeze fine...put some baking paper between them though.

    Yesterday ( shrove Tuesday) was watching Sky news, Jeff Randall was making pancakes with an Italian chef.They were discussing what else can be done with pancakes and the chef told his mother in Italy would use pancakes in lasagna instead of lasagna sheets.

    :eek: Cheeky! Actually they were just a little bigger than the scotch pancakes you buy but were crepes although the homemade jam and whipped cream wasn't on the lenient side :o.

    I was really tempted to post the following but decided not to. But in answer, yes they'll keep in the fridge for a couple of days, and yes, if you'd like to set them aside for longer they freeze just fine :)

    Hehe well my pancakes were rather sizeable so it seemed a waste.

    Thank you for all your replies :) I have popped them in the fridge and will prob freeze if not used today.
