oh no, apples gone brown

I got a couple of bags of already cut apples out of the old mans freezer esterday intending to make a few pies, they were still pretty frozen last night though so I thought I would do them today. However, they are all brown now, can i still use them or will they taste grim?

    They'll be fine :) Next time, rub the cut surfaces with lemon juice, which will help prevent oxidation :D

    While peeling and chopping apples for a pie I always drop the bits into a bowl of water with a good splash of lemon juice in it. It stops the first bits from turning brown by the time you've got the last one done.

    If you lightly simmer the apple, with sugar to taste, in a saucepan for a couple of minutes before making up the pie you'll find that the brown-ness disappears.

    Thanks Squeaky for that tip. I do the bowl of lemony water thing too, (works great for artichokes too) but didn't know about simmering them to take the brown away!

    Or, make the pies using demarara or light brown sugar - then people wont think twice about the colour!
