Working with your ex-employer

The company I work(ed) for has just gone into voluntary insolvency.
The whole staff have been made redundant.
My former employer has acquired the remaining stock and is planning to start up again on a smaller scale.
He has asked me to work for him when he starts up again.
Questions
Is there a period of time before I can work for the same person again, even if it is under a new company?
Will my redundancy payment be affected if I do this?
Am I better of being self-employed and contracting my services to him?
