Hi
Ive cooked this tonight http://www.taste.com.au/recipes/20346/slow+cooked+lamb+curry
and its a little bit too runny.
What can i can to thicken it a little? Also its really creamy a bit like a thai curry where as i wanted Indian, any ideas how i can change it?

Im not sure if i have any cornflour but i will have a look, what can i add to make it less creamy and more dark like an indian?

Strange recipe. Must be the coconut milk that's making it more like a thai. To rescue it, use some curry paste if you have, and also a good big spoonful of tomato puree.

Hi, if you have got some garam masala try mixing that with some cornflour (I would say 2 tsp of garam masala with 2 tbsp of cornflour). Add water until its like sticky goo, you dont want it too runny, then add this into your curry stirring well. If its still too runny repeat the process.
The garam masala should darken it a bit too. I dont see why you couldnt substitute curry powder for the garam masala if thats all you have got.
Adding a tbsp of curry paste is a good idea too, should darken it and make it less sweet.0
