Does anyone have an easy recipie for madeira cake? I've had a look on the recipie collection, but didn't find anything.

Does anone have a tried and tested recipe for Madeira cake. I have tried one and didnt like it it came out really heavy. Im starting a cake decorating course next week and have been told this cake is great for decorating so Id like to get some practice in making them.

I've tried this one and it was lovely:
250g plain flour
a pinch of salt
1 teaspoon baking powder
175g unslated butter - soft but not runny
175g caster sugar
3 medium room temp eggs
Heat oven to 170C/gas 3
Beat butter till creamy then add sugar and beat for about 5 mins until light and fluffy. Gradually add eggs beating after each adding a tablespoon four with last drop of egg. Sift in flour with salt an baking powder and fold in using large metal spoon until all combined. Put in greased/lined tin and bang down to get rid of air and bake for 1 hour or until firm.
Can add juice and zest of half a lemon before flour if desired. I've not tried this, Ive only made the plain cake.

If you add 1/4tsp per egg of glycerine to the mixture after you've added the eggs it will keep the cake moist for over a week

Last time i made this I used a 2lb loaf tin with one of those ready to use liners for laziness
but have done it in a 20cm round deep cake tin also.
Hope it works out well..let me know
