Anyone got any manufacturing management experience?

Hello,
I posted on here a while ago when I had a job interview... didn't get that job but everyone was really helpful and I got some great advice.
I've now been asked for another interview for a different position as a manufacturing manager in a much larger company than I'm with at present and am full of nerves and questions!
I'm currently an operations manager in a small company and the new role would be a move away from the bespoke one off items that my current company manufactures into a production line environment within a much larger organisation. I'm pretty sure that I could do the job and give examples of ways in which I can meet all of the essential criteria at interview but the job description focuses heavily on the importance of Lean, Takt Time, MPS and 5S within the role. Problem is I have no hands on experience of these areas -I've been open about this from the beginning though and they still want to see me.
Anyone have any advice on how I'd be best to handle the inevitable questions regarding this aspect of the role at the interview? My plan is to brush up on my theory so that while I can't draw on experience, I can show that I'm keen to learn! One of the main reasons for applying for this job was training in these areas and I don't want to blow my chances at this stage! My nerves are terrible at the best of times in an interview situation!!
