I've got fully comprehensive and accidental damage home insurance with HSBC. If I were to undertake any DIY work, such as plumbing, would I be covered?

Covered for what?
If you accidentaly damage something during your DIY, you are covered because you have AD. You will be expected to take reasonable precautions - e.g. don't drill a hole in a wall before checking the boiler/TV/painting isn't on the other side; remove things that could get damaged and cover floors etc with dust sheets etc etc.
If plumbing, then if you plumb something up and, say, a joint fails and water gushes out then that is covered by escape of water anyway - repair to the pipeworks isn't covered anywhere though (would be the same if a pro did it, or it was like that when you moved in).
If you do some plumbing badly and there is a slow leak of water that caused damage that isn't covered - it is a gradualy operating cause.0
