Using up new potatoes

Hi all
I have discovered two unopened bags of new potatoes in the veg rack in the garage
. They're not sprouting and ordinarily I'd used them up over the next few days but I'm going away on Friday and won't have the chance to eat them up so am looking for suggestions about what I can do with them? I had thought of freezing them but am worried they'll go mushy

keep the skins on. boil til they are nearly done. while they boiling heat up a roasting tin on the top hob, a little oil in it. when spuds are almost done, drain and put into the hot oil. add garlic cloves and rosemary. toss about a bit til all coated then put into a hot oven until they are starting to go brown and crisp. really good.0

Thanks Lilac-lady and Sandra - these are both methods I would use if I could eat them before Friday but I have all my meals planned / bought for this week and won't physically be able to eat them prior to then so need ideas to preserve them if possible.0

Maybe they will still be ok when you get home... put them back in the garage!0

Seems if you blanch them for 3-5 minutes then chill rapidly in ice water then bag & freeze they should work. Or you could wedge them, toss in oil & flavourings (herbs, paprika & suchlike) & part cook in the oven (then cool & freeze) for home made oven wedges.Truth always poses doubts & questions. Place in boiling water for 5 mins & then immerse in icy water until cold.
Pat dry & put them on a baking tray & freeze.
When they are frozen put them in a freezer bag.
To reheat place from frozen into boiling water for a few minutes.Try to be a rainbow in someone's cloud.0 -
Try googling for a recipe for tartiflette. Basically new potatoes par boiled, mixed with onion, bacon or ham, cheese cubes, cream and cheese on top and cook until bubbly and yummy. Authentic is fancy cheeses, but I did it with gruyere on Monday, aslo Brie in the past, and no reason why not cheddar. Don't see why it wouldn't freeze.

My potatoes were hairy when I went to use a few so I peeled them all and then sliced them into wedges, chips and roasties then par boiled them and froze them (first on a tray and then shoved into freezer bags).
Got enough for 4 or 5 meals, maybe 6, rather than wasting the tatties. 0 -
Don't mean to hijack your post but I have a quick question.
if I boil and mash potatoes can I freeze them? Just thinking it would be handy to have ready made mash.
