I've been asked to make a dessert to serve 20 to feed homeless people at a homeless shelter.
I think this is a really miserable time of year to be on the streets, so would like to make something really nice. Not so worried about it being cheap as chips as this isn't a regular commitment just an occasional one.
The only constraints are that I'd like to be able to make it the day before it is needed so it needs to keep for one night, I don't think there will be facilities to assemble or heat it up when I get there, and it needs to be easily transportable by car.
All ideas gratefully accepted, particularly if they include recipes or links to recipes!

How about some sort of fruit cake? Easy to transport. If you have access to heat things something like a crumble or fruit pie and custard would probably go down well - nice an warming.At least the fish fingers are still frozen, that's what I keep telling myself (Truly Madly Deeply)0

Have made this Nigella cheese cake a couple of times, both times the night before and it is super easy and super delicious - I worked out the fresh fruit needed in the recipe would be about £12 (dear ol' Nigella) however I used a punnet of frozen summer berry fruits instead and was (I suspect) as equally scrummy!
Serves 8-10 so you'd have to make two so you may be limited by your stock of spring-form rings/loose bottom tin! HTH.0 -
Mmmm the cheesecake looks lovely. Dim question, but did you defrost the fruit before you used it, or did they defrost on top of thr cheesecake overnight in the fridge? Did they go a bit watery and bleed into the cheesecake mix?0

With a single type of pudding to feed 20 I wouldn't go for anything that might be an aquired taste! Also if it's for the homeless I'd say something filling like a fruit crumble or sponge pudding and a big jug of custard (if you buy instant custard powder you only need a kettle to make it up).

i'd go for something like a crumble or sponge pud too. especially in this weather, filling and warming.0

Caribbean Trifle
- Chop up Jamaican Ginger cake and place in the bottom of a bowl.
- Layer with one large tin of mango slices, sprinkling some of the juice
onto the ginger cake to moisten
- Pour over custard (either a tin or instant is fine)
- Spread over a layer of whipped cream
- Optional extra is a sprinkling of chopped stem ginger on top
I think one serves about 6 people so you may need to triple the above for 20 people. It always goes down really well when I make it0 -
The only trouble with a crumble is that I don't think I'll be able to heat it up. The shelter is a temporary one in a local community centre and I think the only oven will be needed to make the main course which obviously needs to be hot. I don't think there would be time between main course being served and dessert being required to bring a large dessert up to a warm temperature.0

Oh good idea. I could make it in the slow cooker a few hours beforehand, transport it in the slow cooker and plug it back in to keep warm when I get there! My only reservation is that it might not look all that special, and I think the lady doing the main course is planning on doing rice as her carb element.0 -
