By the way cranberries are on offer at the moment in Tesco.Original Cranberry Recipe
1lb Cooking apples (after prep)
1lb cranberries
2 tsp mixed pickling spices
1/2 pint cider or white malt vinegar
1/2 to 1 tsp ground mixed spice
12oz sugar
6oz raisins
Salt and pepper
Put apples and cranberry into pan
Tie spices in muslin and add to fruit with vinegar and spice.
Cover and cook gently for 15mins then stir briskly and simmer with lid off until fruit is soft.
Add sugar and stri over low heat until dissolved
Add raisins and boil steadily until the consistency of think jam
season to taste.
spoon into jar and seal
For a more savoury version add 8oz finely chopped onion.
I wanted to emulate a Tesco Christmas Spiced wild cranberry and apple chutney which listed the following ingredients:
Cranberries, apples, sugar, white wine vinegar, water, dried onions, salt, ground ginger, garlic powder, cinnamon, nutmeg.My substitutions:
added the onion
replaced cider vinegar with white wine vinegar
replaced mixed spice and pickling spice with garlic powder, ground ginger, cinnamon and nutmeg - unfortunately, I haven't written down the proportions (unbelievable) but I've made it 2 years running and although the results have been slightly different, both have been scrummy!.
I think I started by adding 1 tsp each ground ginger and garlic powder and 1/2 tsp each of cinnamon and nutmeg and then adjusted to taste as I went along.

Thank you all...must have taken a while to type out the recipes & I'm very grateful - as I am sure are others by the look of it! Isnt it great to support people in such practical ways! Am off tomorrow to get jars & looking at the ingredients above have ingredients for most of one (overdid the fruit purchases for xmas cakes!!) so will have a bash!! Fingers crossed for me! Slightly concerned that an alien has entered my body as dont usually cook much & so far this year have made 5 xmas cakes, mincemeat, bathbombs & now chutney!Nerd no 109 Long haulers supporters DFW #1! Even in the darkest moments, love and hope are always possible.0

hehe!! Just got my cranberries (gonna try the cranberry recipe above as seemed christmassy! Yes have enjoyed my alien encounter! Just off to lakeland to get jars (they are the cheapest I've found even on internet) & other bits & will cook the mincemeat tonight (currently soaking as instructed!). Re bath bombs there is a thread here somewhere...if you find it the link for simplysoaps (I think) is on there...I got the stuff in bulk as cheaper & hard to buy citric acid at chemists as drug dealers use it to cut cocaine (apperently!!) & being honest I got fed up of being eyed up suspiciusly when I asked for a large quantity & was consistently refused!! Now wondering if I look like a drug dealer...!! Anyway...instructions are on teh simply soap site but pm if you need additional help!Nerd no 109 Long haulers supporters DFW #1! its all currently bubbling away (original cranberry one by full time mum) but seems quite sharp...have I done something wrong? How did it turn out? I've not had a problem with it being sharp - maybe it is a preference thing.
