I've occasionally made a version of this with lightly fried mixed vegetables such as onions, mushrooms, peppers, green beans, chopped cauliflower stems (or whatever mixture you have available). Add a small amount of flavoured stock to make a liquid sauce then pour into a pie dish and cover with mashed potato mixed with grated cheese. Sprinkle more grated cheese on top and cook in hot oven for about 20 minutes until topping is crispy brown.0

Some good ideas on here - this is going to help when we have a "non-meat" dinner in the week, realised we were eating way too much meat so decided we'll cut down by having a "veg" meal one night, pasta another night and fish and meat the remainder of the week.
