            Stir fry!
 This is what I do with any left over salad veg that is past it's best. Slice it all up. I love cucumber in it to - I find iceberg is my favourite lettuce for this cos even when a bit past best it still has a bit crunch, but if you have plenty other crunchy veg in the stir fry e.g. carrot, cabbage, onion, peppers, then it doesn't matter too much. Chuck the lettuce in at the last minute so it doesn't go ick.

            The secret is to chop off a tiny sliver of the brown stump at the base. Once it's browned over it will make it difficult for the lettuce leaves to absorb fresh liquid. Then soak in a bowl of cold water for an hour. I find this works well and regularly revive my winter lettuces in this way when I have to buy them. In summer I pick them fresh from the garden, often just pulling off sufficient leaves needed at a time rather than pulling up the whole plant.0
