educate me about chicken breast fillets please!

    I tend to find all the frozen ones have so much water content its unbelievable.

    I tend to buy fresh when they're on offer and then freeze. Morrisons were doing 4 largeish chicken breast fillets for £3.80 a few weeks ago :)
    The frontier is never somewhere else. And no stockades can keep the midnight out.

    That can often be as the chicken was not frozen quick enough so big ice cells form which rupture cell walls etc. When defrosted the water is released.

    Of course the chicken can be tumbled which would increase the water content of the chicken.

    also adding water can make it more succulant as the product is not so dry after cooking. (okay cost reason are the main driver).

    Somewhere on MSE in the past week (possibly the takeaway secret thread, from memory), somebody said that they'd accidentally bought the Asda frozen Smart Price chicken breasts once - and found they were the best they'd ever tasted, so now those are the ones they always buy.

    mysupermarket puts these at 39.9/100g. http://www.mysupermarket.co.uk/asda-compare-prices/Frozen_Poultry/ASDA_Smartprice_Chicken_Breast_Fillets_1Kg.html - link gives you the details that say these are 82% chicken + water, salt, dextrose, di phosphates and tri phosphates.

  • If it's for currys / stir fry / fajitas (and are going to be hidden in sauce) why not try quorn fillets? When they're on offer they work out to ~17p for a fillet when you can get a bag for £1!
    They don't shrink and are very low fat!

    (beige veggie I don't know a lOt about meat, but my mum always gets fresh chicken breats from Iceland when they're on offer. I'm sure she said they had the lowest water content of all supermarket chickens - not sure where she got that info tho!!)

    Forgot to add the water content in the Asda Smartprice and Valley foods is very good. They don't seem to be drowned in water. Unlike Tesco Value frozen chicken, bought these once, put them in the George Forman grill and they boiled!!!! the tray was full with water. Tesco value rubbish, Asda smartprice good.
