We did some elephant trekking up in the North out of Chaing Mai also stopped in hill tribe villages with the locals definitely recommended.

The elephant trekking was terrifying. Never again. I though we would be plodding around a paddy field but we went up and down mountain tracks, through forests and through fast flowing rivers - all without a safety belt so we were hanging on for our dear lives.

I didn't think too much of the tribal villages. It just felt too voyeuristic

The highlight was the Bamboo Rafting. It wasn't white water, just peacefully floating down the river with only the sound of the jungle to be heard.

There are so many tours you can do around Chiang Mai - including multi-day day hikes through the mountains and jungle if you are feeling brave and fit enough. I did a one hour taster and collapsed through exhaustion and dehydration.
