Unemployment Insurance - Struggling to understand rules

Hi,
I'm bringing my foreign fiance to the UK soon and since she will be depend on me financially for at least the first 6 months it seems prudent that I take out some unemployment and illness cover though I do have some savings that would last over a year if the worst did happen.
Unfortunately I was made redundant on October 15th 2010 and have only been in my current job since 15th November 2010. I'm currently on a 3 month probation period due to complete in February.
I understand in my circumstances that its very unlikely to get cover now but what would be the earliest point in future that I could do it and could someone recommend any companies and policies for me?
I looked at some but they don't seem to be very clear about exceptions. What is the implication of a 'waiting time' of 4 months? For example if I was made unemployed after 2 months does that mean that I can't claim for another 2 months or that I can't claim at all? There is also the 'excess period' which I think I understand as the time I would not receive money after making a claim.
Then what happens in the case that I'm made unemployed, make a successful claim and receive money for say 3 months then find a job but get made unemployed after say 2 months. Can I claim again immediately or does everything 'reset' and I'd have another waiting period :question:
