My friend made this for me some time ago (its a Dutch dish, i hope i've got the spelling correct). Since its a recipe that could fit into many of the threads on here I decided to post it separately.
For 4 people you'll need:-
4 medium sized potatoes
1 onion
carrots (whatever weight you have in potatoes use half that weight in carrots, I also use clean peelings which I save in a tub in the freezer)
2 cloves of garlic (or equivalent in dried or paste)
half teaspoon of ground black pepper
half teaspoon of chilli powder (or to taste)
half teaspoon of paprika
1 tablespoon of milk
1 egg (although I have used vinegar before when i haven't had an egg!)
drizzle of oil (I use olive oil but vegetable etc works just as well)
method:
chop the garlic, and place in a hot pan oiled pan. Whizz this around and then add the onion (finely chopped). Give this a good stir add the black pepper and then turn the hear down low.
Put the carrots into cook (if I'm using the peeling I cook them in the microwave), and you want to cook them until they are very soft.
Peel the potatoes and cut them small (I find this speeds up the cooking time) and cook them until soft. Drain, mash add the egg (beaten with the milk) and stir well over a low heat, add the onions (which should be lovely and soft by now. Mash the carrots separately then stir through the potatoes, add the paprika and chilli and stir well. Serve on its own or with gravy or with sausages and gravy. I find when I serve this I can cut down the number of sausages I serve without anyone feeling hungry.
This dish is great for using up bits of veg, and i have made different variations (cabbage is another good addition and any left over sprouts chopped really small). Its something I'll be making more now everything else is going up in price!

I am Dutch and we eat this dish quite a lot. It's a typical winter food.
I keep it much simpler I must admit.
Use potatoes
half the amount of carrots, and the same on sliced onions.
A bit of salt to taste... add water and bung the whole thing on the cooker till it's all soft and tender.
Drain the water, add some milk or butter to smooth things out. You can add pepper if you like, if not, it's fine without as well.
Mash the whole thing up untill it's soft and fluffy. Serve with sausage and lots of gravy.
Very 'stick-to-your-ribs' winter food. Very cheap and very filling. :rotfl:0 -
