First time to Europe - Advice please :)

Hi everyone,
My OH and I are heading to europe for a holiday (our first together!) in February and are planning on driving across the Eurostar, up to Amsterdam, to Frankfurt, to Zurich, to Paris and then back across 2 weeks from Feb 6.
Having never driven on the continent before, and not being to familiar at holidaying generally I was wondering if you might be able to give any advice you've previously picked up.
We were planning on booking hotels as an when we arrive in a city to stay flexible (is that a good/bad idea?) but also wondered about parking/driving? I don't much fancy driving round Paris - but I haven't a clue if they'll be a car park just outside?
We've budgeted £100 per night for a hotel - does this sound reasonable?
Any tips you can pass on about how to do this safely and cheaply - not to mention if there's anything en route you'd recommend checking out - would be so appreciated
