Reduced fat coconut milk - question

I made a green Thai curry using paste and reduced fat coconut milk, but it didn;t thicken as promised. Does the reduced fat milk not thicken? I've never used coconut milk before.

It was nice, but very runny. :confused:

    Not sure about the coconut query (although I don't think that the decrease in fat would affect the thicknes) but I've worked in the past with Thai chefs and they always made their Thai Green / Red curries very runny - sounds like you've made it the traditional way! ;)

    I made that last night and I just let it cook away until the sauce had reduced to a decent amount. I don't think the reduction in fat should stop it thickening, either (after all water will evaporate). How long did you cook it for? I just cooked it until it had reduced enough for my taste.

    My mum loved it and my dad said it was the best curry he'd ever eaten (I was so chuffed - they're both chefs :D)

    In my experience, Thai curries are runny. The sauce isn't thick as it is with, say, an Indian curry.

    I found it a bit off putting to start with, but the flavour is great.

    I made a thai curry w/ reduced fat coconut milk.. mine thickened so im not sure that was the cause, it might just be the recipe as I know some thai curry recipes ive tried were runny :S
  • You have to make sure you use *just* the right amount - too little and it will go very thick, too much it will be very runny! You can alter it depending on how you want the sauce - personally I'm awkward and like it a little thicker than "proper" thai curry, but still quite runny :)

    If you want a thicker sauce, try using coconut cream instead - I find it thickens a bit better :)

    i cooked it for about 20 minutes and then I was too hungry to care! But maybe i should alter the recipe and use a bit less, or try the cream, as I do like it a bit thicker.

    Just to add, yes I know it's supposed to be runny, but my dad prefers it a bit thicker, so I just reduced the sauce, might try the cream the next time and see what that's like - thanks for the tip!
  • hi I make thai red curry about once a week as, its one of the few things my step daughters will eat.
    I have tried a few different coconut milks, and must admit that although the reduced fat one is better for you i personally dont like it, as it always seems to seperate more than the normal one.
    I've tried the blue dragon ones, but think that Baart make the best one, they sell this make in most tesco's.
