hot water tank leak

I’m looking for advice re a leak.
I discovered the pipe going into my hot water tank is leaking as it was dripping down through my kitchen ceiling underneath. We have had to get up every two hours during the night to change the towels soaking it up. It may be a while before I can get a plumber so I’m thinking the only thing to do, is stop the water going into the tank. Is it ok to do that and how do I do it.
There are two small red ‘wheels’ and a tap on pipes leading into the tank. Do I turn off one of these – or all three?
If I can stop the water going into the tank, can I drain the water quicker by running taps?
I have oil central heating and an electric shower – should I avoid using?
I would really appreciate some advice, I’m rapidly running out of towels!
