Recording DVDs

I am currently without a DVD recorder so thought I'd try using my PC.......not so easy.
I recorded from sky to my sky+ box. I then played the program from my sky+ into my Twinhan USB connected box via an S-video and audio lead and recorded it. I now have the mpg file on my hard disk.
The question is that my DVD recorder allowed me to control the total time v quality that I can get on the disk, from 2hr high quality to 4hr EP quality. How can I do this with my PC?
