I'm looking for recipes for fruits in alcohol e.g. Pears in brandy, clementines in vodka, cherries in kirsch etc...things like that. I've tried Google but haven't come up with anything much, so any insight you guys could provide would be greatly appreciated. Thanks!

If you click on "Search this forum" and choose "advanced search" just below the input box and then use the word vodka and select titles only in the drop down box below it you'll get quite a list of threads which have all sorts of ideas in them, including sweets, toffee, jelly baybies...Hi, I'm a Board Guide on the Old Style and the Consumer Rights boards which means I'm a volunteer to help the boards run smoothly and can move and merge posts there. Thanks squeaks, have done - got some useful information - but I'm mostly doing it for the fruit aspect, not the alcohol...kinda like this. Sorry, should have clarified!
Although I have just found that the only ingredients in it are fruit, water, sugar and vodka. We must all suffer one of two things: the pain of discipline or the pain of regret and disappointment0 -
Hi BW
As it's the fruit aspect rather than the alcohol, maybe you'd like this recipe from Delia's Christmas book - Spiced Preserved Tangerines. Here's a link to the recipe on Deliaonline http://www.deliaonline.com/recipes/spiced-preserved-tangerines,904,RC.html
There is also a similar recipe for Spiced Pickled Pears, just search for "Pears" when you are on her website.
Waitrose's Food magazine has a small section on general principles of preserving fruit in alcohol here http://www.waitrose.com/food_drink/wfi/cooking/techniques/0407098.asp
(scroll down to the paragraph entitled "Bottling")
Finally, I tried googling for preserving fruit in alcohol and that came up with a number of interesting looking websites.
Hope that helps!

I make these every year with different fruits/spirits. Basically, you put say one pound of fruit in a jar and add half that amount of sugar, cover with spirit and leave for whatever length of time you have. The longer the better but you still have time for December. Don't shake it too much, so the fruit doesn't break up, but swirl it a couple of times a day. If you add more fruit use the same ratio, half sugar to fruit.
You might get some more ideas if you search for rumtopf recipes.

Thankyou so much dannahaz and pol, that's just the information I need! Do I need to poach the fruit or anything? We must all suffer one of two things: the pain of discipline or the pain of regret and disappointment0

Try doing a search (on here and google) for rumtopf too. When I had my loft converted back into a loft, the neighbours came around and scoffed, and called me retro.0

No, no need to cook, just de-stone anything like plums/peaches etc as they can give a tainted flavour. I usually just cut bigger fruit in half and they can soak up the alcohol more quickly.

I just found this:
http://www.recipestogo.com/foodgift/foodgift67.html
It's a simple description of making rumtopf, the recipe is printable and there's some serving suggestions for the finished rumtopf."Then, when every last cent

And he went."
