I made some orange creams a while ago, they didn't have egg in at all, just icing sugar, orange zest, and orange and lemon juice. They were really nice! First set were a bit soggy though. You have to put icing sugar everywhere to stop it sticking when you roll it0

So, ok, I'm an idiot. After a morning spent making mango chutney, I thought it would be a great idea to make peppermint creams. I now have a tray full of christmas tree shaped peppermint creams, a kitchen that looks like hell and I still have half the ball of "dough" to go! To be honest, I'm fast losing the will to live.
Someone please tell me I can freeze what's left and use it some other time! I've looked online and can't find much except a no, which doesn't make sense to me. I mean, all it is is egg white and sugar!0 -
A bit late but could you roll it into a sausage shape and cut slices? Round peppermint creams - lovely especially when half dipped in chocolate.0

It'll probably go quite wet and sticky when you defrost it, so you'd have to add more sugar which will probably defeat the point of freezing it. You could maybe cover pieces in chocolate to make truffles - they'd last longer if the air can't get to them. Alternatively you could roll it into little balls and use it from frozen. It'd probably be quite nice if you added little lumps of it to some vanilla ice cream, along with some dark chocolate chips. Or mix the same into some icebox cookie dough and make chocolate mint cookies. If you're baking it, the squidginess probably won't matter so much.0

I would roll it into a sausage shape and cut pieces off it and leave them to air dry, as someone else has mentioned.

Thanks for all the advice and tips :-) After a nice sit down with a can of Diet Coke and some music, I sorted out the rest of them. It only took me about another half an hour after all my complaining! Glad it's done now though.
