I just bought some agar flakes in my local shop because they didn't sell gelatin. Does anyone know the conversion between the two? I have a recipe for turkish delight that asks for 23g of gelatin powder.

I've never heard of turkish delight being made with gelatine. As far as I'm aware all the ready-made is vegan. There's a recipe here which doesn't use it http://thefoody.com/sweets/turkishdelight.html

Yes, some Turkish delight has gelatine in it. You really have to do a lot of packet-reading with sweets - some brands seem to cope perfectly well without gelatine, whereas others shove it in everything.

I would have thought that the combination of veggies/vegans, people avoiding it for religious reasons and squeamish meat eaters who don't fancy boiled up tendons would have led to a reduction in the use of gelatine, but I haven't noticed it yet.

ETA - Just seen the post about Violet Turkish delight - where do you get it?? I'm drooling at the thought!

Commercially made Turkish delights also have the unfortunate use of cochineal * usually as the red colouring. As most people know cochineal is ground up beetle meaning it isn't vegetarian or vegan friendly. So no Turkish delights are not usually okay for vegans or even vegetarians.

*otherwise known as carmine or E120
I am a vegan woman. My OH is a lovely omni guy :D
  • I've just studied the box of Julian Graves Turkish Delight (pistachio, hazelnut, rose & lemon) I happen to have lurking in my cupboard, and it's veggie and vegan friendly.

It uses E124 as a red colour - also called Ponceau 4R or Cochineal red A, so some cochineals are synthetic now, but of course it's not always clearly marked...

Oh dear, I may have to eat some now! :rotfl:
  • which marshmallow recipe did you use? i have been trying for ages but my marshmallow just isn't whipping up as it should do. PLEASE PLEASE help me.
