    Yorkshire puds filled with beef and horseradish sauce. Sounds expensive, but you can actually stretch just a single steak a long long way, so it's economical as well as impressive.

  • 2 things i do on buffets that always go done great are homemage scotch eggs really simple i use sausages and skin them mainly cause i use lowfat sausages cause i'm slimming but also cause they don't seem to crack.
    homemade quiche is the other quick and easy use pastry mix and add what ever you please.
  • We have always had a boxing day buffet and i usually do;

    Cheese and onion quiche (homemade tastes better)
    Bread sticks
    Dips
    sausage rolls
    cold meat platter
    cheese board and selcetion of crackers
    pork pies
    cocktail sausages
    chicken nuggets
    mini pizzas
    bread rollls
    a range of pickles and dips
    coleslaw
    potato salad
    mince pies
    chritmas cake
    Trifle

    You could do a large pastryless quiche, sausage rolls, cheese sausage rolls, potato wedges and dip, cold meat selection, pasta salad, potato salad, king prawn ring, large plate of salad ie peppers, sweetcorn, lettuce, spring onions, cucumber, and then just get some cheap frozen dessert from iceland with cream, or make a trifle. make a punch, alcoholic and non alcoholic.
  • I think you should keep things low-key, and make food that people can graze at a buffet table. Dips/salads and a bit of leftover meat served cold.... Try here: Boxing Day Recipes [URL][/URL]

    these all sound great! I was planning on doing a baked ham in cola and a turkey crown, and with all these great side dishes I am now looking forwad to it more than the Christmas lunch!

    How about a mint pea and bean salad too?

    Why don't you ask them if they could bring in a gateaux or cheesecake as it will save you worrying with the other buffet items you're getting?

    Or (more obliquely) ask them what they're planning on bringing as you don't want to have two lots of the same thing on the table?

    It could be they don't realise they could help out with the food - or it may embarrass them into bringing a food contribution. :p

    I misread this as there's a really good jerk at Tesco - was thinking you use the same Tesco as me ;)
